Well, I like to cook a lot.

That's what I do for the most part when I'm free.

So, you know, that's pretty much my life.

And so joining this job has kind of allowed me

to do that at a more creative level

all the time. So it's been pretty great.

So are you from the area?

I am from the area I grew up in.

Dickinson went to school in Dickinson and then pretty much lived here now.

League City is where me, my wife, live now.

So pretty much my whole life over here.

All right, So restaurant industry experience.

Yes, quite a bit.

I worked at Cullens, which is a fancy steakhouse

in this area with all sorts of bars and all sorts of things like that.

And then Rudy's barbecue for quite a while, managing over there.

And then also I do catering and pop ups and different

kind of events with the buddy of mine on the side every once in a while.

So definitely strong culinary background.

Yeah, that's I mean, that's pretty much the most of the things I do

So what made you kind of change

directions going from the restaurant industry into a school district?

Seems like a pretty big departure change.

Y'all are both for the outside world joining us in a school district.

So what brought you to the school district?

The big thing is burnout from other job.

It's working every single weekend.

It's working every single holiday, not getting to see my wife,

 

00;02;24;20 - 00;02;28;08

not getting to dinner with my wife or see my my family parents.

That's a lot of people

that may or may not understand, but the restaurant world never stops.

It's 365. Yup.

And so it is definitely a world where burnout can occur and it's.

Very demanding. High demands.

I think unless I requested a weekend off, I wouldn't have a weekend off forever.

So holidays?

Yeah, holidays.

You're working six, seven days that week.

Guaranteed long hours too, I'm guessing.

Yeah, I'm. Yeah.

No matter what. And they're not good hours.

It's not like here

where I can come in at seven and be gone by three when my wife's off.

It's come in at two or 3:00 and get off at midnight.

So we're going to just jump right into that burnout thing, because I think

 

00;03;08;23 - 00;03;13;02

that is something that we want to talk to you about with our CCISD group.

But so I'm sure it was hard

to prevent burnout in your previous career, but.

Correct.

There's really no outlet for solving it.

It's just, hey, you're going to work

 

00;03;25;14 - 00;03;27;18

because we got to work and we got more food going out.

So there wasn't really any options for that.

And there's no real time off in the restaurant world either.

So you don't really get an opportunity to like, relax or.

It's just some of those obstacles

and some of those challenges that you've had to overcome.

Mm hmm.

How do you kind of put that into your current life, too,

to avoid it from happening again?

Well, the the most basic thing is now I get to eat dinner every day

 

00;03;53;22 - 00;03;54;26

with my wife.

 

00;03;54;26 - 00;03;58;09

I get to cook and eat and see each other, which we were going.

 

00;03;58;09 - 00;04;00;22

Some days I could go home, we could meet, maybe see each other

 

00;04;01;04 - 00;04;03;08

when she was going to bed or when I was going to work.

 

00;04;03;08 - 00;04;05;18

And now we see each other everyday.

So first and foremost, that and then also now,

 

00;04;08;27 - 00;04;11;15

because I'm off on the weekends, which I was never off for the weekends,

 

00;04;11;15 - 00;04;15;10

I get to play cards with my parents every week no matter what I am.

 

00;04;16;09 - 00;04;18;01

While we play hearts and we

 

00;04;18;01 - 00;04;21;16

play, there's another game we play in like 70% of the day.

 

00;04;22;07 - 00;04;24;02

But and I'm very bad at them.

 

00;04;24;02 - 00;04;26;22

But it's time that I get to go spend with my man

 

00;04;26;22 - 00;04;29;26

and aunts and uncles, my mom and dad, my cousins, people that I have.

 

00;04;29;26 - 00;04;34;07

And, you know, I get to see on holidays for an hour when I was off work.

 

00;04;34;07 - 00;04;35;06

And that's about it.

 

00;04;35;06 - 00;04;39;08

So I have all these outlets for things that I actually enjoy now versus

 

00;04;39;08 - 00;04;42;13

just work, sleep, work, sleep, work.

And what positive impact I mean, it sounds like

 

00;04;45;20 - 00;04;47;16

family is really important to you, but yeah.

 

00;04;47;16 - 00;04;50;10

It's it's I mean, it's been a game changer who really has.

 

00;04;50;10 - 00;04;52;03

And I could go months

 

00;04;52;03 - 00;04;55;20

without seeing my mom or, you know, and I'm a mom, so, you know, I really

 

00;04;56;03 - 00;04;57;28

I want to be able to go cook with her on the weekends.

 

00;04;57;28 - 00;05;00;09

I want to be able to see them and hang out with them.

 

00;05;00;09 - 00;05;01;29

And I wasn't, you know, a whole month out.

 

00;05;01;29 - 00;05;03;24

Seeing my parents is a lot.

 

00;05;03;24 - 00;05;06;10

And now it's every Sunday, unless we have something going on.

 

00;05;06;21 - 00;05;08;22

And so it's pretty great.

So it sounds like that that one thing that the school that working within

 

00;05;12;10 - 00;05;13;17

the school district is allowing you

 

00;05;13;17 - 00;05;16;08

to find a little more balance and you're taking advantage of that

 

00;05;16;08 - 00;05;18;14

because you know what the other looks like.

 

00;05;18;14 - 00;05;22;21

And so making sure that you have outlets, whether it's family

 

00;05;22;29 - 00;05;27;00

or something else, is very important to help prevent that burnout.

And I'm almost a year into this job now, and I mean, it's night and day.

The difference is like I get off work and I'm smiling

cause I know I'm going to have,

 

00;05;36;09 - 00;05;39;09

you know, things that I can do and get to do the things that I actually

 

00;05;39;09 - 00;05;42;27

enjoy versus again, just going to bed and going to work again,

 

00;05;42;27 - 00;05;45;28

which is pretty much how the restaurant industry is compared to this.

So my question is not being in the restaurant industry is

 

00;05;50;29 - 00;05;54;15

do you get a little more creativity now in the things that you're cooking,

 

00;05;54;15 - 00;05;55;04

in catering?

And does that help a little bit with the burnout as well?

That's a great point.

Yeah.

One of the

things that working for a big corporate chain is that there is no creativity.

It's here's the menu.

You're going to make it the way

that it's supposed to be made and there's no fluctuation whatsoever.

And then with this,

I've been teaming up with my boss, Robert, and we're redoing the menu.

 

00;06;14;29 - 00;06;16;05

We do special menus.

 

00;06;16;05 - 00;06;18;09

We can do fancy dinners for whoever.

 

00;06;18;20 - 00;06;21;20

You know, I can get ingredients, I can do whatever I want for the most part

 

00;06;21;27 - 00;06;22;28

if they order it.

 

00;06;22;28 - 00;06;25;04

And so there's no repetitiveness.

I'm constantly changing it up.

You know, one day I'm doing something.

The next day can be a totally different

cuisine, can be for hundred people, a thousand people, whatever it is.

So it's it's pretty great. It's pretty neat transition.

I think I can speak for many people when I say I, I love that I'm

 

00;06;40;02 - 00;06;41;21

loving all the things coming out of catering.

As long as you don't mess with the bacon because whatever magic you guys have with

 

00;06;45;11 - 00;06;48;12

the bacon is quite delicious whenever it comes out.

Well, that's one of the recipes we're not going to change for sure.

You can't go wrong with bacon.

So what is your favorite part about catering?

We kind of talked about some of the creativity that you have now.

Is there anything else that you like about doing the catering for?

CCISD Yeah, One of the big things is that, you know, in a corporate restaurant,

 

00;07;06;07 - 00;07;10;02

as a manager, I'm not getting to interact with that guest as much.

 

00;07;10;02 - 00;07;14;21

I'm not getting to see if people enjoy the food or get feedback from anybody.

 

00;07;14;21 - 00;07;17;12

And with this, I'm you know, we're a two person department.

 

00;07;17;12 - 00;07;19;12

So if we're feeding large groups of people,

 

00;07;19;12 - 00;07;21;26

I'm out there, you know, right in front of everybody.

We're getting to interact with everybody as they come to the line.

And then I get feedback and I get thanks and I get, you know, that kind of stuff.

And I get to meet people, you know, meet, you know, it's something that,

 

00;07;31;01 - 00;07;33;14

you know, I'm stuck in a cave in a kitchen most of the time

 

00;07;34;24 - 00;07;35;25

in my job previously.

And now I'm out about meeting new people.

And it's a great community So far.

It's great.

So I'm sure a lot of people don't really know the depth of which

the catering services the district has.

So talk to us a little bit about kind of what you all offer,

What types of events that you put on, etc.?

Well, yeah, we can pretty much do anything anybody wants.

We do have a set menu that you can choose things from, anything from breakfasts.

You can have, you know, build your own breakfasts.

 

00;08;03;16 - 00;08;06;19

We have some different breakfast items that you can just pick from for everybody.

But then we even do, you know, fancy entrees.

Or you can pick your meats,

your sides, your vegetables, your desserts, all that stuff.

But then also we can cater to anything you need.

So if you're having a special party, you're looking for something specific.

You just have to reach out to us and we can make it happen for you.

just playing with things and trying to add things

that we think that people would like.

I guess our job as a catering department isn't to make a profit.

It's to serve the community of CCISD and give them an opportunity

to get good food without having to spend a bunch of money

going to all these different restaurants

that are around because you can get it in-house

almost at cost, like it's a very we're not trying to get a profit for Rio.

We're not trying to make money with anything.

We can work with budgets

and we can try to make it to

where you guys can have great food and it's served by people in the city as well.

I feel you're bringing people together through food.

That's something you like to do.

So for me, I started cooking with my mom,

for my family, so I go help her out,

whatever I could, and then we'd feed my dad, my two brothers.

People would come over, I'd help on holidays.

And so, like,

that's where my core of cooking is, is cooking for other people and serving

other people and, you know, that kind of thing.

So for this,

you know, it's it's a huge community of people

that I get to go serve every day and to see the reactions and stuff.

So did this start at a young age or was it the later?

I was.

I was always cooking with my mom.

My dad worked at CCISD It was a truent officer here for ever

retired from the district everything.

And so we would

I would help her cook and make meals for we need to get home and everything so.

So in the family CCISD Yeah. Yeah.

He was here for a long, long time.

A long, long time.

So I kind of like watching all of the TV shows

without the cooking and thinking, you know, I'm learning so much,

although I don't feel like I can cook very well.

But I know we have an amazing culinary program

at Clear Springs High School, and I think some of those shows

and things online have really brought the culinary arts to light.

So just in case someone, a family, a parent,

a student is listening to this, how does one get into culinary?

Like, did you go to school somewhere?

How do you it sounds like started with Mom,

but did you have any additional training For me?

It started, you know, the base just being in the kitchen of the mom.

And that started the passion for it.

Of course, I'm not going to say she doesn't know how to cook that well, but she

she did it when I was younger.

That's what I'm saying.

She's probably any listeners.

What I'm saying is she didn't have a broad like vast expanse of recipes,

whereas now,

you know, I've learned all stuff and we can get back together

and I can teach her things and I can teach her what I've learned.

And it's pretty cool that's come full circle that way.

But I went to the Art Institute, Houston.

I graduated in 2011

and then I've been just, you know, cooking ever since for the most part.

So I feel like we have to ask, what's your favorite thing to cook?

Favorite thing to cook?

I like like Cajun Creole food.

So I like good like etoufee or gumbo, things like that I'm pretty keen on.

I know we have a good roux.

I know it's really.

He really takes 30, 45 minutes to get it right.

You're looking for something and you want something,

And then I have people that handle pricing.

I don't duty that kind of stuff,

but they can work with you on budgets and figure out what you want

and how much it's going to cost and make it work for you. So I think

you spent a lot more time

outside of the school district than you have in the school district.

So what kind of key takeaways from that experience outside

And I think in the restaurant industry too, maybe the knowledge

that there are job opportunities in the school district is not top of mind.

So it sounds like you had a connection, but how would you encourage

others that may be, you know, outside of a school district

to know that there's opportunity within one for a culinary background?

And that I mean, that applies to everything.

And I just think that applies to just about anyone listening to this right now.

the week is execute the plan that I've made and we're good to go.

For me, so far, it's just been meeting as many people as I can

because I never know

what that relationship is going to come back around in some way, shape

or form, because the people I'm meeting now, like I've met you a long time ago

And so like, you know, just meet everybody.

You can try to make connections
